Cooking for Person who is Diabetic and requires dialysis?
A individual is coming over for dinner who is diabetic/requires dialysis.
I am not sure exactly what to make to for dinner. I know sugar even in natural forms is off limits except a little fruit and carbohydrates should be to the absolute minimum. I cook and eat a lacto – ovo low fat, high vegetable, fruit and legume diet already (with fish once in a while) so meat is not an issue.
Please, does anyone have any suggestions, recipes, experience or tips for me?
I am a gourmet cook, the technicality does not matter.

But every patient has different case. You have to contact his doctor (to check his blood test) and consult with his nutritionist.
